Few minor injuries are as painful as the ded paper cut. Just thinking about it probably makes you cringe. However, these cuts are usually small, hardly noticeable, and rarely bleed. So what makes them so painful? A paper cut is similar to a cut with a razor blade, with one major difference. A razor blade makes a smooth, clean incision in the skin, leaving behind few if any foreign particles that might cause the wound to become infected. Although it might hurt initially, the pain brought on by a small razor cut usually fades after a few minutes. Like a superficial cut by a razor blade, a paper cut smoothly parts the skin, but while a clean razor leaves little behind to irritate the wound, a paper cut deposits material that really stings. Paper is made of pressed wood mulch, and a variety of chemicals. When paper cuts into the skin, chemical coated fibers, as well as bacteria and tiny particles remain in the wound and stimulate pain receptors in the skin. Because the cut is usually small and shallow, the skin on either side of the wound closes quickly, trapping the fibers and other particles inside. The result is a good deal of pain, and since the closed wound doesn’t allow for much bleeding, the pain seems entirely out of proportion to a cut that you can barely detect.

Italian food for the discerning—and loaded意大利美食专为识货的行家打造FOR cognoscenti, the height of Italian taste these days is not Prada or Maserati, but a food market called Eataly. Fruit and vegetables are piled artfully in barrows and crates. Cornucopias of pastas and pestos and peperoncini lie on shelves. Groups of little tables tempt shoppers to stop and sample the salamis, or some of the eye-wateringly expensive truffles for which its founders home town ofAlba, inPiedmont, is famous. Oscar Farinetti set up the first Eataly in 2007, in an old vermouth warehouse in the Lingotto district of Turin.2007年奥斯卡·法立内迪在都灵的林格托一家破旧的苦艾酒仓库建立首家Eataly。His 21st is due to open on December 2nd inChicago. When Eataly came toManhattanin 2010, the media were still reporting queues around the block two weeks later.2010年,当Eataly进入曼哈顿两周后,媒体依然在竞相报道依然包围着该美食城的消费者队伍。Perhaps one of Mr Farinettis American partners—Mario Batali, a well-knownNew Yorkchef—had something to do with that. But inTokyotoo, after a slow start, people have taken Eataly to their hearts and wallets. Mr Farinetti is a serial entrepreneur who had the good sense to sell his previous electrical-retailing business before the bottom fell out of it, and switch to a more promising sector. But he is also a fully paid-up member of the Slow Food movement founded by Carlo Petrini, his friend and fellow Piedmontese. Under Mr Petrinis guidance Eataly stocks the produce of several small firms, such as Gragnano durum-wheat pasta, wines from Piedmont and theVenetoand oil from westernLiguria. Information cards tell shoppers who produced what and how. The idea, says Mr Farinetti, is not just selling food but “increasing the percentage of people who eat with awareness, choosing high-quality products and paying special attention to the source and processing of raw materials.” It works. Turnover this year is likely to be 300m, up by 30% from 2012, thanks to the opening of new shops. 30%。More are planned by 2017, acrossAmericaand inLondonandParis. Sales have risen in existing stores, too, by 4%-plus inItaly, 5% inNew Yorkand 10% inJapan. Earnings before interest, tax, depreciation and amortisation are almost 20% of revenue inNew Yorkand 15% inTurin. 15%。Eataly provides its customers with gorgeous surroundings—less combative than at Harrods in London, less oppressively wholesome than at Whole Foods Markets, an American chain—in which they might imagine Gianmaria and Francesca weeding the tomato plants or ting the grapes. Mr Farinetti is selling them a seductive image ofItalyitself. /201312/267748

Science and technology科学技术New transistors新型晶体管Mechanical advantage机械优势Two new types of transistor may lead to simpler, more efficient computers两种新型晶体管或许会导致更加便捷高效计算机的出现WHEN baking a cake it helps to have all the ingredients within reach,当你在烧烤蛋糕的时候,它有会让所有的一切都变得触手可及,rather than wasting time and energy making frequent trips to the pantry. Something similar is true of the logic circuits in computersmicroprocessors. These could be made faster, and would consume less energy, if they were able to store information themselves instead of fetching it from separate memory chips or hard drives. The problem is that the transistors used to make logic circuits hold their electronic state, and therefore any data they contain, only when powered up. The choice engineers face is thus between supplying continuous power to a transistor, so that it can retain its memory,因此,工程师们面临的选择就是要么对晶体管提供一个持续的电源,让晶体管保持自己的记忆,and ferrying data that would otherwise be lost to and from so-called non-volatile memory devices that do not require continuous power. Cracking this problem—so that transistors can act as their own non-volatile memory—would make all computers faster. It would be particularly valuable, though, for mobile devices. These could be made smaller and lighter, since they would require fewer components. And they could go for longer between charges. To this end, Hiroshi Mizuta of the University of Southampton, in England, and Tsuyoshi Hasegawa of the National Institute for Material Science in Tsukuba, Japan, are proposing a marriage between two novel types of transistor that could hardly be more different. One, the atomic transistor, draws on the latest advances in nanoscience. The other, the mechanical transistor, sounds as if it has been lifted from the annals of the industrial revolution. The atomic transistor works, as its name suggests, by shuffling individual atoms around within the device. The atoms in question are copper, and the result of the shuffling is to create or destroy a conductive pathway between two crucial bits of the transistor, the source and the drain, thus switching the device on or off. That is possible because this part of the transistor is made of tantalum pentoxide, a material whose atoms are arranged in a lattice which contains holes large enough for copper atoms to squeeze through. The mechanical transistor, more properly called a nano-electromechanical systems transistor, creates and destroys the connection between source and drain mechanically. When a voltage is applied across two beamlike electrodes made of aluminium, which are separated by a gap of around 50 nanometres,两个柱状的铝电极间隔约50纳米,当电压加在这两个电极之间时,它们就会相互通电,charge builds up on each, creating an attractive force between them, until a critical point is reached. At that moment one of the electrodes flips towards the other, causing the two to make contact. This closes the circuit and turns the transistor on. Apply the opposite charge and the electrode flips back, breaking the circuit. What makes these two very different types of transistor attractive is that both the copper and the aluminium stay put when the power is turned off. They can thus act as memories as well as processors. The on state represents one type of binary digit and the off state represents the other. Dr Mizuta and Dr Hasegawa are therefore using the novel transistors to try to make the worlds first non-volatile processor chip. Ideally, such a chip would have only one sort of transistor, since that would mean it was much easier to manufacture. However, transistors come in two varieties, n-type and p-type. Both are needed in a logic circuit, but atomic devices can be only n-type. The alternatives, then, are to make the circuit entirely out of NEMS transistors,那么另一个方案就是完全用NEMS晶体管制造电路,or to mix the two by using atomic devices where an n-type transistor is needed and NEMS ones where a p-type is required. Dr Mizuta and Dr Hasegawa have opted for a mixture,士Mizuta和Hasegawa士选择了二者的混合,because atomic transistors are much smaller than NEMS ones, and the saving of space outweighs the awkwardness of mixing them together. If their recipe works, it will mean far fewer electronic trips to the pantry and a quicker baking time for whatever answer the new chip is trying to cook up. /201305/239036

Business商业报道Soft drinks in Mexico墨西哥软饮料Fizzing with rage嘶嘶愤怒A once-omnipotent industry fights what may be a losing battle一个曾经无所不能的行业的一场必败之仗LA MANSION steakhouse inside Mexicos lower house of Congress has become the headquarters of a lobbying effort the likes of which congressmen say they have never seen before. There is so much wining and dining that one lawmaker, proposing a bill on October 15th to regulate the lobbyists, claimed he was talking to a half-empty floor because his colleagues were too busy being schmoozed at La Mansion. The lobbyists work mainly for soft-drinks companies such as Coca-Cola, PepsiCo and their respective Mexican bottlers Femsa and Cultiba. Their focus is a proposal currently under debate in Congress to slap an excise tax of one peso on to the price of a litre of fizzy drinks. Though the industry has faced down consumer activists in the past in Coca-Colas biggest market by volume outside the ed States, this initiative comes directly from President Enrique Pea Nieto. The lobbyists may have blundered in their attempt to kill it. The governments argument is simple. Mexicans consume too many fizzy drinks. The habit has helped make the country one of the most obese in the world, and obesity is a killer:这个习惯使墨西哥成为世界上最肥胖的国家之一,而肥胖是一个杀手:Mexicos mortality rates from diabetes are staggeringly high. The government proposed the sin tax to discourage soft-drinks consumption. The industrys reaction has been apoplectic. In full-page ads in national newspapers it has argued that the tax is regressive and satanises soft drinks, which it claims do not cause obesity. With a hint of xenophobia, the lobbyists call it the Bloomberg tax, because New Yorks mayor, Michael Bloomberg, has also sought to tax fizzy drinks. Bethany Gomez of Euromonitor International, a consultancy, says the industry is right to be worried. More than half the fizzy drinks sold in Mexico are in bottles of two litres or more, which is where the extra pesos would be most noticeable. A switch to smaller sizes would hit volumes. What is more, the tax may set a precedent. Coca-Cola seems to be worried that whatever happens here could sp to the rest of Latin America, says Javier Trevio, a ruling-party lawmaker. The lobbyists have made some missteps, congressmen say. They have created enemies in other industries by proposing that the tax be charged on sugar content, not just on soft drinks. That angers companies like Nestle, which makes sugary snacks, as well as Mexicos politically connected sugar-cane producers. They have also been too overt in their lobbying, in a political system that is used to more subtle forms of collusion between lawmakers and business. One of Femsas main lobbyists, a former ruling-party bigwig, is said to have had a blazing row with the current head of the party in the lower house, who resented being bossed around. So the soft-drinks lobbyists tactics may have backfired. As The Economist went to press there was still no final agreement on the soft-drinks tax—but congressmen appeared y to approve the one-peso levy—as well as extending another tax to junk food. Israel carried out air strikes on Gaza in response to a barrage of rocket attacks from Hamas militants. The air assault killed scores of Palestinians, including many civilians. The Israeli cabinet authorised the call-up of 40,000 army reservists in preparation for any potential ground offensive.
